I am staying very often in Mannheim and love it to ride along the Neckar direction Dossenheim, The Weisser stein climb is my favorite climb of that region especially because it's a 'quiet' climb with less cars and the road goes through the forest and significant amount of height meters in one climb.
The start of the climb through the village is going nicely, after the first turn till 'the 3 oaks' it becomes tough. After the 3 oaks monument you get a nice 6-7% ascent, th last 1.5km are less steep till you reach the Weisser stein monument. At the top no great view because you re in the middle of the forest but there is a 'biergarten' and restaurant. Great to combine this climb with the Heidelberg(köningstuhl) climbs.
